SOUP WITH GREAT NORTHERN BEANS FOR THE SOUP KITCHEN by CHEF DAN:

Ingredients:
3
pound great northern beans
1
teaspoon baking soda
2
smoked ham hocks
1 (5
pound smoked ham) diced
3
onions, chopped
7
stalks celery, chopped
12 carrots,
chopped
2
tablespoon garlic, minced
1
(46 Oz) jug Y/8 juice
1
(6 lb 12 Oz) can diced tomatoes
22
cups vegetarian broth
1/4-cup
EACH Worcestershire sauce, brown sugar, and Dijon mustard
2
tablespoon EACH Chile powder, black pepper, oregano, thyme, and curry blend
7
bay leaves
3
tablespoons dried parsley
1/3-cup
lemon juice
2
teaspoons sea salt
DIRECTIONS:
1.
Soak
beans overnight with baking soda and enough water to cover by 1-inch.
2.
The
next day drain and rinse and place in a stockpot.
3.
Add
vegetable broth, soaked beans and all remaining ingredients.
4.
Bring
to a boil and then simmer for 2-3 hours or until beans are soft.
5.
Remove
bay leaves and hocks, slice the meat off the hock and enjoy.
