GREEN BAKED TOMATOES FOR THE SOUP KITCHEN ENJOY DAN:

GREEN BAKED TOMATOES FOR THE SOUP KITCHEN by CHEF DAN:
Serves 12

INGREDIENTS:
10 green tomatoes, thinly sliced
1 cup cornmeal
1 cup bread crumbs
1 teaspoon cayenne pepper
2 tablespoons paprika
4 eggs whites, beaten with 1/4-cup water
Sea salt and freshly ground black pepper to taste

DIRECTIONS: (PRE-HEAT OVEN TO 400 DEGREES)
1.   Lightly coat a baking sheet with Pam.
2.   In a shallow dish, combine cornmeal, bread crumbs, cayenne pepper, paprika, and a splash of salt and pepper.
3.   Dip each tomato slices into egg whites and water mixture.
4.   Dredge through the cornmeal mixture to coat.
5.   Place slices in a single layer on the prepared baking sheet.
6.   Spray the tops with cooking spray.
7.   Place in pre-heated oven and bake 20-25 minutes or until tops toasted.
