CAESAR PAILLARDS CHICKEN BREASTS WITH VEGETABLES SALAD ENJOY DAN:

CAESAR PAILLARDS CHICKEN BREASTS WITH VEGETABLES SALAD KIT by CHEF DAN:
Severs 2

INGREDIENTS:
2 tablespoons plain 2% yogurt
1 tablespoon Parmesan cheese
2 teaspoon s lemon juice
1/2-teaspoon water
 1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1/2-teaspoon Dijon mustard
1/2-teaspoon anchovy paste
1 garlic clove, minced
2 cups vegetable salad kit from Costco (broccoli, Brussels sprouts, cabbage,  and kale)
2 tablespoons dried cranberries, pumpkin seeds that come in the salad package
2 tablespoon feta cheese
Sea salt and freshly ground black pepper to taste

DIRECTIONS:
1.      Combine 9 ingredients in a salad bowl.
2.      Add vegetables salad kit with dried cranberry mixture.
3.      Place chicken between 2 sheets of plastic wrap; pound to 1/4-inch thickness.
4.      Season with salt and pepper to taste.
5.      Coat a skillet with cooking spray over high-heat when hot.
6.      Add chicken and cook 3 minutes turn and cook 2 minutes more.
7.      Remove from pan and place each breast on a plate.
8.      Top with slaw and feta cheese.
