HABANERO
HELLFIRE CHILI FOR THE WORKERS AT RANDY’S TREE FARM

INGREDIENTS:
4
onions, chopped
6
garlic cloves, minced
3
pounds ground beef
2
pounds spicy ground pork
15
jalapenos, seeded and chopped
15
habanero peppers, seeded and chopped
20
Anaheim peppers, seeded and chopped
1
quart dark beer
4
cups coffee (strong brewed)
2
(28 Oz) can diced tomatoes
2
(28 Oz) can whole tomatoes
5
(16 Oz) cans chili beans
1
(6 Oz) can tomato paste
1
cup chili powder
2-ounces
bittersweet chocolate, shaved into fine pieces
1/4-cup
lime juice
1
tablespoons cayenne pepper
3
tablespoons cumin
3
tablespoons smoked paprika
DIRECTIONS:
1.
In
a stock pot brown beef and pork over medium-high heat.
2.
Season
with salt and pepper.
3.
While
meat is browning, stir in onion, garlic, jalapeno peppers, habanero peppers,
Anaheim peppers, cumin, cayenne, paprika, diced tomatoes, whole tomatoes, beer,
coffee, chocolate, lime juice and tomato paste.
4.
Reduce
heat to simmer and simmer for 2 hours, stirring occasionally.
5.
Add
beans and continue simmering for 45 minutes.
