SALMON FOR THE SOUP KITCHEN PARTY by CHEF DAN:
Serves 15
INGREDIENTS:
2 4 pound salmon fillets
2 lemons
1 teaspoon JOHNEY’S seasoning or OLD BAY SEASONING
1 tablespoon garlic powder
1 teaspoons oregano
1/4- cup melted butter
2 tablespoons dried parsley
2 tablespoons dry sherry
A pinch of paprika
DIRECTIONS: (PRE-HEAT OVEN TO 350 DEGREES)
1. Place salmon skin side down on a baking sheet.
2. Squeeze juice of 2 lemons over fish.
3. Sprinkle with JOHNEY”S seasoning OR OLD BAY SEASONING
4. Add garlic powder.
5. Sprinkle liberally with oregano.
6. Pour melted butter all over.
7. Sprinkle with parsley.
8. Slowly drizzle dry sherry over the top.
9. Bake in pre-heated oven for 20-25 minutes or until fish is opaque and flakes easily.
10. Sprinkle with paprika to bring color back to the salmon.
