MORE INFUSED OIL RECIPES ENJOY DAN:

   ROASTED CHICKEN WITH INFUSED GARLIC OIL WITH LEMON by CHEF DAN:

 Serves 4



INGREDIENTS:



2 tablespoons infused oil, divided

2 whole bone-in, skin-on chicken breast

4 garlic cloves, minced

4 fresh rosemary leaves, minced

Zest from 1 lemon

Coarse salt and freshly ground black pepper



DIRECTIONS:                     (PRE-HEAT OVEN TO 450 DEGREES)



1.    In a bowl, mix together 1/2-teaspoons kosher salt, 1 tablespoon infused oil, garlic, rosemary, and lemon zest.

2.    Gently lift skin at bottom of breast to create a pocket.

3.    Using a spoon, place oil mixture into the center of the meat.

4.    Press on skin, spreading mixture evenly over the meat.

5.    Sprinkle the chicken breasts with 1 tablespoon infused oil.

6.    Sprinkle liberally with salt and pepper.

7.    Set chicken in a baking pan.

8.    Roast chicken in pre-heated oven and roast for 35-45 minutes, or until internal temperature reaches 160 degrees.

9.    Let rest 5 minutes.

10. To remove meat, cut straight down along one side of the breastbone.

11. Remove the entire breast half.

12.  Slice each breast half crosswise on bias, making thin slices.
