BLUEBERRY SYRUP WOW!! ENJOY DAN:

                       BLUEBERRY SYRUP by CHEF DAN:

Makes about 6 cups



INGREDIENTS:



5 cups blueberries

4 cups water

2 cups sugar

3 tablespoons lemon juice

1/2- teaspoon cinnamon

1/2- teaspoon cloves



DIRECTIONS:



1.    In a pot, combine the blueberries with 1 cup of water.

2.    Crush the berries with potato masher, and bring to a simmer.

3.    Simmer for 15 minutes.

4.    Strain the juice through a mesh strainer.

5.    Press down on the mesh to release all the juice.

6.    Discard the solids

7.    In the pot add the sugar, and remaining 3 cups of water.

8.    Bring to a boil, stirring to dissolve the sugar.

9.    Boil the syrup over medium-heat or until it registers 225 degrees, about 20 minutes.

10. Add the berry juice, lemon juice, cinnamon, and cloves, and boil over high-heat for 1 minute.

11. Let syrup cool.

12. Pour into just cleaned bottles.

13. Seal and refrigerate for about 6 months.
