SALAD WITH CHICKPEAS AND FETA by CHEF DAN:
Serves 4
INGREDIENTS:
1 (15oz) can chickpeas, rinsed and drained
1 red onion, thinly sliced
4 small (FRESCO)cocktail cucumbers, sliced
1 4oz jar carpers, drained
5 0z jar pitted kalamata olives
4 oz feta cheese
1 head of romaine, chopped
1/2- cup fresh basil
SALAD DRESSING:
2 tablespoons grape-seed oil
1 teaspoon garlic powder
1 teaspoons onion powder
1 teaspoon dried Italian seasoning
1 teaspoon dried basil
1 tablespoons lemon juice
1 teaspoon Dijon mustard
1 cup rice wine vinegar
DIRECTIONS:
1. In a bowl mix chick peas, red onion, cucumber, carpers, olives, feta and romaine.
2. In a separate bowl, whisk together all salad dressing ingredients.
3. Pour dressing over the salad and toss to coat.
4. Top with fresh basil.
