SNAP- PEA SALAD WITH BABY GREENS AND FETA WOW!!!!! ENJOY DAN:

                                 SALAD WITH SNAP-PEAS AND FETA by CHEF DAN:
Serves 8-10

INGREDIENTS:

1-1/2-pounds of snap peas, trimmed and cut in half on the bias
1 package (16oz) baby greens
8 radishes, trimmed, thinly sliced
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1/2- teaspoon ricotta cheese
1/2-teaspoon thyme
1/4-cup feta cheese
2 tablespoons fresh chocolate mint
Freshly ground black pepper

DIRECTIONS:

1.    In a bowl add snap-peas, baby greens and radishes.
2.    In a separate bowl whisk the oil, lemon juice, balsamic vinegar, ricotta cheese and thyme.
3.    Pour dressing over the baby greens mixture.
4.    Combine well.
5.    Top with feta cheese and fresh mint and some freshly ground black pepper.
