WHOLE ROASTED CAULIFLOWER ENJOY DAN:


                      WHOLE ROASTED CAULIFLOWER by CHEF DAN:
Serves 4

INGREDIENTS:
2-pound cauliflower, leaves trimmed
1-tablespoon Old Bay Seasoning
salt & black ground pepper
3-tablespoons olive oil

DIRECTIONS (PREHEAT OVEN TO 475 F)
1.   Bring 4-quarts of water to a boil in a stock pot.
2.   Add 1/2-cup salt to the water to a boil.
3.   Carefully lower the cauliflower into pot.
4.   cook for 5 minutes, flipping the cauliflower after 2 minutes.
5.   Transfer the cauliflower, stem-side down, to a colander.
6.   Let drain for 10 minutes.
7.   Transfer to a prepared baking dish.
8.   Rub top with oil, & sprinkle with Old Bay seasoning & 1-teaspoon pepper.
9.   Roast, rotating the dish once or twice.
10  Spoon any oil that accumulates over the cauliflower.
11  Bake until golden brown about 20-25 minutes.
12  Let cool for 5 minutes, then serve in the baking dish.
