PERUVIAN MARTHA'S BEEF STEW ENJOY DAN:


                   PERUVIAN MARTHA'S BEEF STEW by CHEF DAN:
                             (From her mother-in-law recipes book)
Serves 4-6

INGREDIENTS:
2-pounds good quality beef chuck roast, cut into 2-inch cubes
2-tablespoons olive oil
1-red onion, quartered
2-Roma tomatoes, cubed
1-tablespoon EACH Peruvian dried Oregano, dried parsley & dried cilantro
Water to cover
No salt until finished cooking
Add potatoes or rice if desired

DIRECTIONS;
1.   Heat oil in a skillet over medium-high heat & when sizzling.
2.   Add cubed meat and sauté until browned about 5 minutes.
3.   Add to a stock pot along with remaining ingredients.
4.   Cover with water & place lid on & bring to a boil.
5.   Reduce heat & simmer for about 45-50 minutes.
6.   Pour into bowls & enjoy.
