ROASTED LITTLE POTATOES WITH BLUE CHEESE ENJOY DAN:


         ROASTED LITTLE POTATOES WITH BLUE CHEESE by CHEF DAN:
Serves 4

INGREDIENTS:
20-little potatoes, halved
2-tablespoons olive oil
1/2-teaspoon smoked paprika
1/4-teaspoon EACH salt & pepper
1-onion, peeled & cut into 1/2-inch wedges
4-tablespoons blue cheese
2-tablespoons chives

DIRECTIONS: (PREHEAT OVEN TO 400 F)
1.   Lightly coat baking sheet with Pam.
2.   In a bowl, combine potatoes, & next 3 ingredients.
3.   Toss to coat the potatoes.
4.   Add onion wedges, & gently toss to coat.
5.   Transfer the potatoes & onions to a baking sheet.
6.   Cook until vegetables are soft about 30 minutes.
7.   Cut onions wedges into 3 pieces.
8.   Transfer the vegetables to a bowl.
9.   Toss with blue cheese & chives.
