CROCK POT CHICKEN ENJOY DAN:


                               CROCK POT CHICKEN by CHEF DAN:
Serves 8-10

INGREDIENTS:
1-onion, chopped
1-bell pepper, chopped
2-garlic cloves, minced
3-pounds boneless skinless chicken thighs
1-tablespoon EACH Tandoori Marsala, & curry powder
1-teaspoon EACH ground ginger, ground ginger, & dried thyme
1-tablespoon brown sugar
1/2-cup chicken broth
1/2-cup craisins (from Costco)
1-(14.5 Oz) can diced tomatoes


DIRECTIONS:
1.   Place onion, peppers, & garlic in the crock pot.
2.   Place chicken over the top of onion mixture.
3.   Whisk next 6 ingredients with the chicken broth.
4.   Pour over chicken, cook on high for 1-hour.
5.   Add craisins & tomatoes.
6.   Reduce heat low & cook about -4 hours.
7.   serve over rice or rice noodles.
