PUMPKIN ALFREDO PENNE PASTA ENJOY DAN:


                   PUMPKIN ALFREDO PENNE PASTA by CHEF DAN:
Serves 4

INGREDIENTS:
2-cups penne pasta
1-1/2-cups pumpkin puree
1-cup coconut milk
1/2-cup white wine
1-teaspoon EACH ground nutmeg, & ground cinnamon
1/2-cup shredded mozzarella cheese
1-teaspoon salt
1/2-teaspoon EACH black pepper & red pepper flakes

DIRECTIONS:
1.   Cook pasta according to package directions.
2.   Remove drain & set aside.
3.   Heat the pumpkin puree in a skillet over medium-heat.
4.   Add coconut milk: stir with a whisk to incorporated & smooth.
5.   Add wine & next 6 ingredients whisk until incorporated.
6.   Heat for about 5 minutes or until flavors melt together.
7.   Add the penne pasta & stir, let sit 5 minutes.
