HEIRLOOM TOMATO SALAD ENJOY DAN:


                 HEIRLOOM TOMATO SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
2-cups arugula salad or 1 (5 Oz) package spring mix
3-tablespoons olive oil
2-tablespoons balsamic vinegar
1-teaspoon Dijon
1-garlic clove, smashed
1/2-teaspon Pure Maple syrup
1/4-teaspoon EACH dried oregano, & thyme
3-heirloom tomatoes cut into wedges & other various shapes.
1/4-cup toasted pine nuts
1/2-onion, diced
1/4-cup feta cheese

DIRECTIONS:
1.   Place salad greens in a salad bowl.
2.   In another bowl, whisk together, oil & next 6 ingredients.
3.   Pour over salad greens; toss to coat.
4.   Transfer to a large platter.
5.   Arrange tomato of various shapes over greens.
6.   Top with pine nuts, onion, & cheese.
