BALED EGGS WITH LORI'S PESTO ENJOY DAN:


                  BAKED EGGS WITH LORI’S PESTO by CHEF DAN:
Serves 4

INGREDIENTS:
4-each ramekins
Pam spray for ramekins
1-tablespoons Parmesan cheese, grated
2-tablespoons cream
2 eggs to each ramekin
salt to taste
top with Lori’s pesto (recipe to follow)
splash of red pepper flakes

DIRECTIONS: (PREHEAT OVEN 325 F)
1.   Arrange ramekins on prepared baking dish
2.   Add to ramekins Parmesan cheese, cream & eggs.
3.   Season with salt.
4.   Pour hot water 1/2-way up the ramekins.
5.   Bake in preheated oven for 15-20 minutes or until egg whites are set & yolks are runny.
6.   Top with Lori’s pesto and ed pepper flakes

LOR’S PESTO:
1/4-cup tightly packed basil leaves
2-galic cloves, minced
1/2-cup pine nuts
1/4-teaspoon salt
1/4-cup Parmesan cheese
1/2-cup olive oil

DIRECTIONS:
1.   In a blender pulse the first 4 ingredients.
2.   While pulsing add the olive oil until emulsified.
3.   Remove from blender and stir in Parmesan cheese.
