GREEK STUFFED PEPPERS ENJOY DAN:


                   GREEK STUFFED BELL PEPPERS by CHEF DAN:
Serves 4

INGREDIENTS:
4-bell pepper with stems
1-tablespoon olive oil
1-pound ground beef or chicken
1-onion, diced
2-garlic cloves, minced
6-chery tomatoes, quartered
1/4-cup Kalamata olives, pitted
1-(15.5 Oz) fire roasted tomatoes, drained
1-cup Jasmine rice
1-tablespoon red wine vinegar
3/4-teaspoon salt
1/2-teaspoon black pepper
4-ounces feta cheese

DIRECTIONS: (PREHEAT OVEN TO 350 F)
1.   Cut peppers in half through the stems.
2.   Remove seeds & membranes; discard.
3.   Heat oil in a skillet over medium-high heat & when sizzling.
4.   Add beef or chicken, cook until starting to crumble, about 6 minutes.
5.   Add onion, & garlic & sauté for about 5 minutes.
6.   Stir in cherry tomatoes & next 6 ingredients.
7.   Cook undisturbed for 2 minutes.
8.   Remove from heat & let cool 5 minutes.
9.   Divide mixture evenly among bell peppers.
10  Arrange in a prepared baking dish.
11  Place in oven & bake 10 minutes.
12  Sprinkle cheese on pepper mixture.
13  Then bake 20 35 minutes more.
