WATERMELON CANTALOUPE PINE NUT SALAD ENJOY DAN:


             WATERMELON CANTALOUPE  PINE NUT SALAD by CHEF DAN:
serves 4

INGREDIENTS:
1-tablespoon lemon juice
1-tablespoons red wine vinegar
1/2-teaspoon kosher salt
2-tablespoons olive oil
2-cups watermelon balls or cubes
2-cups cantaloupe balls or cubes
5-cups baby arugula
1/4-cup pine nuts
1/3-cup crumbled feta cheese
freely ground black pepper to taste
A pinch of coarse salt

DIRECTIONS:
1.   Whisk together lemon juice, vinegar & sat in a bowl.
2.   Then add oil in a slow stream, whisking until emulsified.
3.   Add watermelon, cantaloupe, arugula, & pine nuts; toss to coat.
4.   Sprinkle on feta cheese, pepper & a pinch of coarse salt.
