BLACK BEAN BREAKFAST BOWL ENJOY DAN:


                 BLACK BEAN BREAKFAST BOWL by CHEF DAN:
serves 2

INGREDIENTS:
2-Yukon Gold potatoes
2-tablespoons olive oil, divided
1-(15 Oz) can black beans, drained and rinsed
1-teaspoon chili powder
1-teaspoon paprika
1-teaspoon cumin
1/4-cup fresh salsa or Pico de Gallo
salt & pepper to taste
2-eggs
8-cherry tomatoes, halved
1-avocado, diced
1-tablespoon fresh cilantro

DIRECTIONS:
1.   Wash potatoes & prick them a couple of times with a fork.
2.   Cook in the microwave for about 6 minutes.
3.   When cool, slice them up.
4.   Add 1-tablespoon oil to a skillet over high-high heat when sizzling.
5.   Add the slice potatoes & cook around 5 minutes each side.
6.   Add 1-tablespoon olive oil to another skillet, when sizzling.
7.   Add drained black beans & next 6 ingredients & cook for 5 minutes.
8.   Add a little water if necessary.
9.   Fry the eggs with a little oil, then serve with fried potatoes, black bean mixture.
10  Add cherry tomatoes & diced avocados.
11  top with cilantro.
