ZUCCHINI NOODLES WITH AVOCADO CREAM SAUCE ENJOY DAN:

     ZUCCHINI NOODLES WITH AVOCADO CREAM SAUCE by CHEF DAN:
Serves 4

INGREDIENTS:

3 zucchini, peeled and ends removed
1/2-teaspoon sea salt
1 tablespoon olive oil

SAUCE
1 avocado, peeled and pit removed
3 garlic cloves, thinly sliced
1/2-teaspoon salt
1 teaspoon lemon pepper
2 tablespoons olive oil
1 tablespoon lemon juice

 Top with 1/4-cup fresh Parmesan cheese

DIRECTIONS:
1.   Julienne the zucchini and place in a strainer over a bowl.
2.   Sprinkle 1/2-teaspoon salt over the zucchini and toss to coat.
3.   Allow to rest 20 minutes to allow excess liquid to drain.
4.   Wrap in a few paper towels and squeeze gently and wrap again to remove any liquid.
5.   To make the sauce: place all sauce ingredients in a blender, blend until smooth.
6.   Place zucchini in a bowl and pour sauce over the zucchini.
7.   Toss to coat.
8.   Top with Parmesan cheese.
