QUINOA SALAD WITH WALNUTS WITH HEMP SEED DRESSING ENJOY DAN:

QUINOA SALAD WITH WALNUTS WITH HEMP SEED DRESSING by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup of quinoa
1-1/2-cups water
1-1/2-cups snap peas, sliced on the bias in half
2 scallions, thinly sliced
1 tablespoon fresh basil
1 tablespoon lemon juice

DRESSING:
1/4-cup walnuts, chopped
1/4-cup raw hemp seeds
1-1/4-cup raisins
1-1/2-tablespoon fresh basil

DIRECTIONS:
1.   Rinse the quinoa and then place in a sauce-pan with water and bring to a boil.
2.   Reduce heat, cover and simmer for 15 minutes.
3.   Remove from let cool and the fluff with a fork.
4.   Stir snap peas, scallions, and basil and lemon juice into the quinoa.
5.   In a blender blend dressing until smooth.
6.   Pour dressing over quinoa mixture, stir to combine.
