LOT OF TOMATOES SO MARINARA SAUCE ENJOY DAN:


                       PASTOR FORD’S MARINARA SAUCE by CHEF DAN:

Makes 4 cups

 

INGREDIENTS:

1/4-cup olive oil

1 onion, diced

4 garlic cloves, peeled and thinly sliced

2 cups carrots, grated

1/2-cup red wine

4 stalks of celery, chopped

1/2-teaspoon sea salt

1/2-teaspoon freshly ground black pepper

2 (32 Oz) cans crushed tomatoes or 3-1/2-pounds of fresh tomatoes a mixture of plum or beef steak

1 (6 Oz) can tomato paste

3 tablespoons Italian seasoningMAR

 

DIRECTIONS:

1.   In a blender add, crushed tomatoes, tomato paste, garlic, Italian seasoning, salt and pepper.

2.   Blend until smooth.

3.   In a skillet add oil and when sizzling add onions and sauté for 7 minutes.

4.   Add the blended tomato sauce and red wine.

5.   Simmer for 30 minutes, stirring occasionally.

6.   Will keep in the refrigerate for 3 days or freeze for 3 months.
