GROUND TURKEY FOR THE SOUP KITCHEN ENJOY DAN:


FRESH GROUND TURKEY WITH SWEET POTATO AND SPINACH by CHEF DAN:

Serves 30-40

 

INGREDIENTS:

 

4 pounds ground turkey

4 tablespoons olive oil

5 sweet potatoes, peeled and cubed

12 celery ribs, diced

6-pounds fresh spinach

5 onions, chopped

5 garlic cloves, chopped

1 (6-pound) can of diced tomatoes

12 cups bow tie pasta, uncooked

22 cups chicken broth

1/2-cup red wine vinegar

2 teaspoons black pepper

4 teaspoons EACH tried basil, dried, thyme and salt

1 teaspoon allspice

 

DIRECTIONS:

 

1.    Heat 2 tablespoons olive oil in the bottom of a stock-pot over medium-high heat.

2.    Add ground turkey and sauté for 8 minutes, or until turkey is browned.

3.    Set ground turkey aside.

4.    Add 2 tablespoons olive oil and sauté onions, celery and garlic, stirring often for 5 minutes.

5.    Add potatoes and cook until they begin to soften, about 12 minutes.

6.    Add broth: bring to a boil, scraping up browned bits.

7.    Reduce heat, cover and all other ingredients and simmer for 50 minutes.

8.    Add spinach.

9.    Stir until spinach has wilted into the broth.

10. Sea salt and freshly ground black pepper to taste.
