CHICKEN THAT'S WHAT FOR DINNER TONIGHT ENJOY DAN:

CHICKEN WITH COUSCOUS by CHEF DAN:
Serves 4

INGREDIENTS:

4 (4oz) boneless, skinless, chicken breast
1 cup chicken broth
2/3cup couscous
1 tablespoon grape-seed oil
3 tablespoons wine vinegar
1 red onion, halved, thinly sliced
1 cup cherry tomatoes, halved
1 tablespoon cumin
1/4-cup toasted pine nuts
1/3-cup goat cheese

DIRECTIONS:

1.   Cook couscous according to package directions:
2.   Heat oil in a skillet over medium-high heat, until sizzling
3.   Add chicken and cook for about 5-7 minutes or until browned on all sides.
4.   Transfer to plate, cover and keep warm.
5.   In the same skillet, add onions, vinegar and cook about 5 minutes.
6.   Stir in tomatoes and cook 1-2 minutes.
7.   Add chicken and warm thoroughly.
8.   To the couscous add the cumin and pine nuts, stir until well blended.
9.   Spoon couscous mixture onto a platter top with chicken, goat cheese and tomato mixture.
