TEX MEX CHICKEN IN THE CROCK POT

INGREDIENTS:
4
chicken breasts
1
onion, chopped
1/3-cup
chicken broth
1
(10.5 Oz) can RO*TEL diced tomatoes with chilies
1
(7 Oz) can salsa Verde
TEX-MEX
SEASONING RECIPE:
2
teaspoons EACH chili powder, green chipotle powder
1
teaspoon EACH cumin, sea salt, smoked paprika, sugar, onion powder, garlic
powder, and fennel powder
1/4-teaspoon
cayenne powder
1
tablespoon lime juice
DIRECTIONS:
1.
In
a bowl add all seasoning ingredients together, stir to combine.
2.
Rub
both sides of the chicken breast with Tex-Mex rub.
3.
Season
each chicken very well.
4.
Place
the seasoned chicken breast in the bottom of a prepared crock pot.
5.
Add
onion, and next 3 ingredients on top of the chicken.
6.
Cook
on low for about 6 hours or until the chicken is falling apart.
7.
Serve
over jasmine rice
