HOME MADE SALSA VERDE WITH TOMATILLOS by
CHEF DAN:
Makes
2-1/2-cups
INGREDIENTS:
1-1/2-pounds
tomatillos, husked and rinsed
2
jalapenos,
1
onion, chopped
8
cloves garlic,
1
bunch of cilantro leaves
1
teaspoon cumin
1
tablespoon Worcestershire sauce
1(10
Oz) can RO*TEL diced tomatoes with green chilies
2
tablespoon lime juice
Sea
salt and Seasoned Pepper Medley
2
ripe avocados
DIRECTIONS:
(PREHEAT OVEN TO 400 F)
1.
Prepare
a baking sheet by spray it with Pam.
2.
Cut
the tomatoes in half; Do Not cut the tomatillos in 1/2-top to bottom.
3.
Cut
the jalapenos in half longthwise.
4.
Add
the jalapenos to another baking sheet if needed.
5.
Keep
the tomatillos and jalapenos in a single layer on a baking sheet.
6.
The
halves should be cut side down.
7.
Bake
for 20 minutes, the skin should start to shrivel, let cool; set aside.
8.
In
blend add onion, and next 7 ingredients, add cooled tomatillos and jalapenos.
9.
Pulse
until the mixture is mostly smooth and no big chunks remain.
10.
Scraping
down the sides as necessary.
11.
When
the mixture is cool add avocados and stir to combine.
12.
Makes
Verde creamier.
