STUFFED AVOCADOS WITH GARLIC SHRIMP by

Serves

INGREDIENTS:
2
ripe avocados
1/2-pound
large shrimp, raw
4
garlic cloves, minced
2
tablespoons garlic cloves
Sea
salt and Seasoned Pepper medley to taste
1/4-cup
onion, chopped
3
tablespoons mayonnaise
4
teaspoons caper
2
teaspoons EACH Dijon mustard, lemon juice, and garam masala
1
tablespoons fresh snipped chives
DIRECTIONS:
1.
Half
the avocados and take the pit out.
2.
Scrape
out most of the meat, leaving a very thin layer to hold up the shell better,
set aside.
3.
Chop
the meat into squares and place in a bowl.
4.
Squash
a little bit with your hands.
5.
In
a skillet add oil, minced garlic and the shrimp, over low-heat.
6.
Season
with S. &. P, sauté until shrimp turn pink.
7.
Pour
shrimp with garlic and oil in the bowl with avocados pieces.
8.
In
a bowl combine onions and next 5 ingredients.
9.
Add to shrimp mixture and combine.
10.
Spoon
the mixture into the avocado shells.
11.
Top
with fresh chives.
