BLACK
GARLIC SHRIMP AND SCALLOPS by CHEF DAN:
Serves
4
INGREDIENTS:
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame oil
5
cloves black garlic, thinly sliced
1/2-teaspoon
red pepper flakes
1
red bell pepper, charred
1/2-pound
shrimp
1/2-pound
scallops
1
teaspoon EACH smoked paprika, lemon juice and Old Bay seasoning
3/4-teaspoon
dried thyme
1
cup white wine
Sea
salt and Seasoned Pepper Medley
1/4-cup
Pamigiano-Reggiano cheese
1/2-cup
fresh snipped chives
DIRECTIONS:
1.
In
a skillet over medium-heat add oil and when sizzling.
2.
Add
black garlic, bell pepper and sauté for about 3 minutes.
3.
Add the pepper flakes, and increase heat to medium-high.
4.
Add
garlic shrimp, scallions, paprika, Old Bay and thyme.
5.
Sauté
2 minutes, stirring occasionally.
6.
Add
wine, garlic, bell pepper and cook 1 minute.
7.
Remove
the shrimp, scallops, garlic and bell pepper to a platter.
8.
Add
lime juice, chives, salt and pepper to taste to pan and just heat through.
9.
Pour
the sauce over the shrimp and shallots.
10.
Top
with Pamigiano-Reggiano cheese.
