ROASTED
PEARS WITH GORGONZOLA CHEESE CRANBERRIES AND NUTS

INGREDIENTS:
2
tablespoons butter
4
ripe pears, peeled, halved, and cored
1/3
cup sugar
1-1/4-cup
port wine
3
ounces gorgonzola, coarsely crumbled
1/4-
cup dried cranberries
1
tablespoon lemon juice
1/8-teaspoon
sea salt
1-cup
walnuts
DIRECTIONS: (PRE-HEAT OVEN TO 450 DEGREES)
1.
Heat
1-1/2-tablespoons butter in an oven-safe skillet over medium-high heat.
2.
Place
pear halves, cut side down.
3.
Cook,
without moving them 3-5 minutes or until just brown.
4.
Transfer
skillet to oven and roast pears for 15 minutes.
5.
Using
thongs flip pears and continue to cook 12-15 minutes longer.
6.
Using
thongs, transfer pears to a platter.
7.
Retune
skillet to medium-high heat.
8.
Add
wine, sugar, cranberries, salt and remaining butter.
9.
Bring
to vigorous simmer, whisking to scrape up any browned bits.
10.
Cook
until sauce has reduced and has a consistency of syrup 8-10 minutes.
11.
Remove
skillet from heat and whisk in cheese
and lemon juice.
12.
Pour
sauce over pears, sprinkle with walnuts.
