TERRY'S
FRESH POACHED PEAR AND FETA CHEESE SALAD WITH PEAR VINAIGRETTE

INGREDIENTS:
1
(10 Oz) bag mixed greens, or 1 head Boston lettuce
3/4-cup
pear vinaigrette, recipe to follow
4
ounces feta cheese
1/2-cup
chopped pecans
FOR
POACHED PEARS:
4
ubileen pears from Terry’s trees, cored and halved
2-cups
red wine
1/3-cup
sugar
2
tablespoons lemon juice
2
teaspoon vanilla extract
2
teaspoons cinnamon
Reserve-1/3-cup
poaching liquid
PEAR
VINAIGRETTE:
2
poached pears, removed from poached pears
1/4-cup
Tuscan Herb olive oil
1/4-cup
balsamic vinegar
1/3-cup
poaching liquid from the pears
Sea
salt and freshly ground black pepper to taste
DIRECTIONS:
1.
Toss
the mixed greens in the pear vinaigrette in a salad bowl.
2.
Add
cheese and pecans.
3.
Place
in a mound of salad green on each plate; serve with 1/2-the poached pear.
4.
Combine
all poaching ingredients except pears, and bring to a boil.
5.
Reduce
heat to simmer, add pears and simmer for 20-25 minutes.
6.
Remove
2 pears from poached ingredients.
7.
In
a blender add 2 pears and reaming vinaigrette
ingredients and puree until smooth, adding 1/3-cup pouching liquid.
8.
Season
with salt and pepper.
