ONION, CABBAGE, CARROTS, APPLES AND POTATOES ENJOY DAN:

HEALTHY SOUP FOR THE SOUP KITCHEN ONIONS CABBAGE CARROTS AND APPLES                                                                                         by CHEF DAN:
Serves 30-40

INGREDIENTS:
30 cups chicken broth
1/4-cup olive oil
8 onions, caramelized
10 cloves garlic, crushed
5 heads of cabbage, cored and shredded
10 carrots, sliced
12 apples, peeled and cored
10 potatoes, thinly sliced
1/4-cup white vinegar
1 tablespoon EACH dried thyme, dried basil, dried parsley, and salt
Ground black pepper to taste

DIRECTIONS:
1.   In a stock-pot over medium heat add oil, when sizzling.
2.   Add garlic, cabbage, carrots and apple and sauté for 12-15 minutes.
3.   Add broth, caramelized onion, potatoes, and herbs, plus salt.
4.   Bring to a boil, and simmer for 1 hour.

CARAMELIZED ONIONS:
8 onion, peeled and sliced
2 tablespoons butter
2 tablespoon olive oil
1 tablespoon balsamic vinegar
Sea salt and ground black pepper to taste

1.   Place onion a stock-pot over medium-heat.
2.   Cook covered, stirring frequently, until they are almost sticking to the pan, about 20 minutes.
3.   Stir in butter and oil, balsamic vinegar, and salt and pepper.
4.   Cover, reduce hand and simmer for 40-60 minutes, add more oil if needed.
