SPAGHETTTI SQUASH , SAUSAGE AND VEGGIES ENJOY DAN:


SPAGHETTI SQUASH WITH SAUSAGE AND VEGGIES by CHEF DAN:

Serves 30

 

INGREDIENTS:

5 spaghetti squash, halved lengthwise and seeded

1/2-cup olive oil

5 onions, chopped

3 tablespoon minced garlic

2 bell peppers, diced

1 (48 Oz) can diced tomatoes

4 cups feta cheese

2 teaspoons dried oregano

2 teaspoons dried basil

3/4-teaspoon salt and pepper

 

DIRECTIONS:    (PRE-HEAT OVEN TO 375 THEN 350 DEGREES)

1.   Season with salt and olive oil.

2.   Place spaghetti squash with cut side down on a prepared baking sheet.

3.   Bake for 30-35 minutes.

4.   Remove squash from oven and when cool, shred pulp with a fork.

5.   In a skillet over medium-heat, cook the sausage until browned.

6.   Set aside.

7.   Drain, and mix in onions and bell peppers. And sauté 5 minutes

8.   Add garlic and cook 1 minute.

9.   Mix in the shredded squash and tomatoes into the skillet, season with oregano, basil, salt and pepper.

10.                Remove skillet from the heat, and mix in 2 cups feta cheese until melted.

11.                Transfer to a prepared casserole pan.

12.                Bake 25-30 minutes.

13.                Sprinkle with remaining cheese and continue cooking 5  more minutes.
