GRILLED CHICKEN WITH JALAPENO DRESSING ENJOY DAN:


GRILLED CHICKEN WITH JALAPENO POPPER DRESSING by CHEF DAN:

Serves 2

 

INGREDIENTS:

2 boneless, skinless, chicken halves, seasoned grilled and cut into bit-size chunks

2 tablespoons sour dried cherries

1- Apple chopped

1/4-cup roasted, chopped and skinned hazelnuts

4 cups romaine or other lettuce, shredded

1 avocado, diced

2 roma tomatoes, sliced

2 tablespoons feta cheese

2 tablespoons jalapeno popper dressing (recipe to follow)

 

 DRESSING:   (MAKES 1 CUP)

1/2-cup light cream cheese, softened

1/4-cup light Greek yogurt or mayonnaise or sour cream

1/4-cup buttermilk

2 roasted fresh jalapenos

1 garlic clove

2- Teaspoon cumin

1 tablespoon cilantro

Sea salt and freshly ground black pepper to taste

1.   Puree everything in a food processor.

 

SALAD:

1.       Combine the chicken, cherries, apple, hazelnuts, salt & pepper.

2.   In a bowl add the mixed greens.

3.   Add the diced tomatoes and diced avocado over the greens

4.   Serve dressing on top of the greens, and top with hazelnuts.
