PORK LO MEIN by CHEF DAN:
Serves

INGREDIENTS:
1/2-
pound udon noodles
3/4-pound
pork thinly sliced
2
tablespoon grape-seed oil
2
eggs lightly beaten
3
tablespoon soy sauce
2
tablespoons oyster sauce
1
tablespoon tamarind concentrate
1
tablespoon mirin
1
tablespoon fish sauce
1
bunch scallions, thinly sliced
3
cloves of garlic, minced
1
thumb-size fresh ginger, minced
6
baby portabella mushrooms, sliced
1
red bell pepper, thinly sliced
4
cups slaw mix
DIRECTIONS:

Cook
udon according to package directions:

Reserve
3 tablespoon cooking liquid.
3.
In
a bowl mix together, soy sauce, oyster sauce, tamarind, mirin, and fish sauce.
4.
Set
aside.
5.
Put
the pork in a bowl and add 2 tablespoons soy sauce mixture.
6.
In
a wok heat 1/2 tablespoon oil over medium-high heat.
7.
Add
egg without stirring, until set about 1 minute.
8.
Flip
and cook for 30 seconds and transfer to cutting board and cut into stripes.
9.
Heat
reaming oil to the wok, add pork and stir fry for 2 minutes.
10.
Transfer
to a plate.
11.
Add
scallions, garlic, and ginger, stir-fry 1 minute.
12.
Add
mushrooms, bell pepper, and slaw mix and stir-fry for 4 minutes.
13.
Return
pork to the wok, add the udon, reaming soy sauce mixture, and reserved cooking
liquid
14.
Cook
for 2-3 more minutes.
15.
Stir
in the egg
