MASHED POTATOES WITH YOGURT OR CREAM CHEESE OR SOUR CREAM YOUR CHOISE ENJOY DAN:


MASHED POTATOES WITH GARLIC AND YOGURT by CHEF DAN:

Serves 8-10

 

INGREDIENTS:

3 pound Yukon gold potatoes, peeled and cut into chunks

1 cup chicken broth or reserved liquid

6 garlic cloves, halved

1/2-teaspoon sea salt

1-1/2-cups low fat Greek yogurt, (or cream cheese, or sour cream)

Sea salt and freshly ground black pepper to taste

1 tablespoon chives, for garnish

 

DIRECTIONS:

1.   Put potatoes, garlic,  and 1  teaspoon salt and enough water to cover in a stock pot.

2.   Bring to a boil over medium-high heat.

3.    Reduce heat to medium and simmer until potatoes are tender, about 15-20 minutes.

4.   Drain reserving 1 cup liquid.

5.   Using a potatoes masher or ricer; mash until smooth.

6.   Stir in broth or reserved liquid, yogurt and continue to mash.

7.   Season potatoes mixture and garnish with chives.
