BIRD IN A PAPER BAG ENJOY DAN:


                     TURKEY IN PAPER BAG by CHEF DAN;

12-16 pound turkey

 

INGREDIENTS:

1 large brown paper bags

1/2-cup butter, softened

1/4-cup sea salt

1 tablespoon garlic powder

1 tablespoon poultry seasoning, recipe to follow

1 tablespoon Montreal seasoning (course salt, ground black pepper, and garlic granules)

1 tablespoon olive oil

 

DIRECTIONS: (heat oven to 500 degrees then 400 degrees then 300 degrees)

 

1.   The night before cooking turkey; season turkey inside and out with salt, garlic powder, and poultry seasoning.

2.   Place in plastic bag and refrigerate overnight.

3.   Stuff turkey with you favorite stuffing recipe, or vegetables.

4.   Tie legs together and fold wings back behind themselves.

5.   Pat dry and rub olive oil all over bird.

6.   Sprinkle skin with Montreal seasoning.

7.   Open up paper bag and coat the bottom inside with softened butter.

8.   Turn bag over so the butter is on top, and place bag on a rack.

9.   Cut a piece of aluminum foil spray with Pam, place on bottom of bag.

10.                Place turkey in the bag and staple shut.

11.                Place turkey in cold oven and heat oven to500 degrees for1 hour.

12.                Turn heat down to 400 degrees for 1 hour longer.

13.                Turn heat down to 300 degrees for 1 additional hour.

14.                After 3 hours tear away the bag in pieces and let rest for 20-30 minutes, the longer the better.

 

POULTRY SEASONING:

2 teaspoon ground sage

1-1/2-teaspoons ground thyme

1 teaspoon ground marjoram

3/4-teaspoon rosemary

1/2-teaspoon EACH nutmeg and black pepper

Mix together and place in Mason jar with lid.

 

Turkey can be stuffed with 2 stalks of celery, 1 carrot, roughly chopped, 1onion, cut into quarters and 4 garlic cloves, crushed
