THE SOUP KITCHEN HAS ZUCCHINI SO CHOCLATE CAKE ENJOY DAN:


CHOCOLATE ZUCCHINI CAKE FOR THE LADIES AT THE SOUP KITCHEN

                                                                                             By CHEF DAN:

Serves 12

 

INGREDIENTS:

2-1/4 cups all-purpose flour

1-cup sugar

1- cup brown sugar

1/2-cup cocoa powder

1 teaspoon baking soda

1-teaspoon kosher salt

3/4-cup milk

1/2-cup grape-seed oil

1/2-cup butter, room temperature

2 eggs

1-teaspoons vanilla extract

2 cups gated unpeeled zucchini

1 (16 Oz) package semi-sweet chocolate chips

3/4-cup peanuts

 

DIRECTIONS:      (PRE-HEAT OVEN TO 325 DEGREES)

1.   In 9X13-inch baking dish, sprayed with Pam.

2.   Then dust lightly with a splash of flour.

3.   Sift flour, cocoa powder, baking soda, and salt into a bowl.

4.   Beat sugar, butter and oil in a bowl until well blended.

5.   Add eggs 1 at a time, beating well after each egg.

6.   Beat in vanilla extract.

7.   Mix in dry ingredients alternately with milk in 3 additions each.

8.   Mix in grated zucchini.

9.   Pour batter in pre-pared pan.

10.                Sprinkle with chocolate chips and nuts over the top.

11.                Bake for 50-60 minutes.

12.                Cool cake completely in pan.
