CHILI
WITH GROUND WHITE CHICKEN OR TURKEY by CHEF DAN:
Serves

INGREDIENTS:
1
tablespoon olive oil
2
onions, finely chopped
2
bell peppers, cored and chopped
2
pounds ground white chicken or turkey
3
garlic cloves, minced
1/4-cup
chipotle chili powder
2
(14.5 Oz) cans diced green chili peppers
1
teaspoon cayenne pepper
1
tablespoon cumin
1
tablespoon dried oregano
1/4-cup
all-purpose flour
1-cup
white wine
3
cups chicken broth
3
(15.5 Oz) cans great northern white beans, drained
1
(16 Oz) can refried beans
1
cup sour cream
DIRECTIONS:
1.
In
a skillet over medium-heat and onion and peppers and sauté for 5 minutes.
2.
Add
the chicken and brown breaking up any large pieces.
3.
Sauté
for about 5 more minutes.
4.
Add
garlic, chipotle powder, green chilies, cayenne pepper, cumin, oregano, cook
for 2 minutes.
5.
Add
wine, broth, flour, and beans.
6.
Bring to a boil and simmer for 10 minutes.
7.
Stir
in the sour cream and heat through.
8.
Season
with kosher salt and freshly ground black pepper.
GARNISHES
PICK AND CHOOSE:
Mexican
cheese blend, diced avocados, minced scallions, chopped tomatoes, or fresh lime
wedges.
