PUDDING
WITH DRIED CRANBERRIES FOR THE LADIES AT THE SOUP KITCHEN

INGREDIENTS:
1
quart milk
2-1/2-cups
water
1
cup white rice
1
teaspoon salt
1
cup sugar
1
cup dried sour cherries
1
teaspoon jasmine extract
DIRECTIONS:
1.
Bring
2 cups of the milk, water, rice, and
salt to a boil in a sauce- pan.
2.
Reduce
heat and simmer, covered, for about 30 minutes.
3.
Remove
from heat and let stand for 5 minutes.
4.
Stir
in reaming milk, sugar, cranberries, and jasmine extract into the sauce-pan,
with the rice mixture.
5.
Cover
and simmer for 20-25 minutes or until mixture is creamy.
6.
Remove
from heat and let stand for 5 minutes.
