THE NUTTY FLAVOR OF BULGUR AND BEANS ENJOY DAN:


       BULGUR WHEAT WITH GARBANZO BEANS AND MINT by CHEF DAN     

Serves 4

 

INGREDIENTS:

1-1/4-cup water

1 cup bulgur wheat

2 tomatoes, diced

1 cumber, peeled and diced

6 scallions, finely chopped on the bias

1/2-fresh mint, chopped

1/4-cup lemon juice

2 teaspoons olive oil

1/2-teaspoon kosher salt and fresh ground black pepper

1 (15 Oz) can garbanzo beans, drained

 

DIRECTIONS:

1.   Bring the water to a boil in a sauce-pan.

2.   Stir in bulgur, and then remove from the heat.

3.   Cover and let stand until the water is absorbed, about 25-30 min.

4.   In a bowl combine the tomatoes, cucumber, scallions, mint, lemon juice, oil, salt and pepper.

5.   Add the bulgur, toss to combine.

6.   Fold in the garbanzo beans and serve.
