J.W. DESERTS GAVE ME 25 POUNDS OF EGG WHITES SOOOOOOOOO MACARONS ENJOY DAN:


FRENCH MACARONS FOR THE LADIES AT THE SOUP KITCHEN by CHEF DAN:
Makes 36

INGREDIENTS:
7 egg whites
1 cup powdered sugar
1/2-cup white sugar
2 cups finely ground almonds
1 tablespoon coffee extract
3-cups shredded coconut
1 teaspoon vanilla extract

DIRECTIONS:       (PRE-HEAT OVEN TO 325 DEGREES)

1.   Beat eggs whites in a bowl with a whisk attachment and beat eggs until fluffy.
2.   Stir in powdered sugar, ground almonds, coffee extract, shredded coconut, and vanilla extract.
3.   Whip about 30 strokes.
4.   Form mixture into 1-1/2- mounds.
5.   On a baking sheet that is sprayed with cooking spray add coconut mounds.
6.   Space 1-inch apart.
7.   In pre-heated oven add macarons and bake for about 15-17 minutes.
