ROASTED
GARLIC AND ASPARAGUS SALAD BY CHEF DAN:
Serves
4
INGREDIENTS:
2
heads garlic
2
garlic cloves, chopped
3
tablespoon olive oil
1/2-teaspoon
kosher salt
1/2-teaspoon
fresh ground black pepper, divided
1/4-cup
fresh chives, minced
1/4-cup
lemon juice
2
bunches asparagus, trimmed
2
tablespoons sesame oil
2
teaspoons lemon zest
2
teaspoons honey
1/4-cup
toasted pine nuts
2
tablespoon black sesame seeds
DIRECTIONS: (PRE-OVEN TO 4OO
DEGREES)
1.
Slice
the tips off the garlic heads, exposing the cloves.
2.
Place
the cloves in a small baking dish.
3.
Pour
2 tablespoons olive oil over them and sprinkle with salt & pepper.
4.
Roast
in a pre-heated oven for about 45-50 minutes.
5.
When
cool, gently squeeze garlic clove from the skins into a dish.
6.
Place
the asparagus on a baking sheet; drizzle with reaming olive oil.
7.
Sprinkle
with lemon zest and a little salt and pepper.
8.
Bake
for 15 20 minutes, shake the baking sheet occasionally.
9.
Place
on plates sprinkle sesame dressing over
10.
Top
with sesame seeds and pine nuts.
SESAME
DRESSING:
1.
Gently
squeeze garlic cloves into a bowl.
2.
Add
chopped chives and chopped garlic.
3.
Swirl
in sesame oil lemon juice, and honey.
