TOFU FOR BREAKFAST ENJOY DAN:


                       TOFU BREAKFAST CASSEROLE by CHEF DAN:

Serves 4

 

INGREDIENTS:

 

1 (14 0z) block firm tofu

1 tablespoon grape-seed oil

1 package frozen hash brown or tater tots

1/2-cup cheddar cheese

1 onion, diced

2 garlic cloves, minced

1 roasted red bell pepper

1 roasted yellow bell pepper

1 teaspoon turmeric

1/2-teaspoon cumin

1/4-teaspoon chili powder

1/4-teaspoon red pepper flakes

1 bunch scallion, cut on the bias in 1/2-inch slices

Sea salt and freshly ground black pepper

 

DIRECTIONS:   (PRE-HEAT OVEN TO 350 DEGREES)

1.   Add oil to a skillet over medium-high heat, when oil is sizzling.

2.   Add onion and sauté for 4-5 minutes.

3.   Add garlic and sauté for 1 minute.

4.   Add bell peppers and sauté for 5-7 minutes.

5.   Place tofu in a blender and pulse until well broken up, not liquefied.

6.   Fold in spices and a splash of salt, and pulse a few times.

7.   Spray the bottom of a casserole pan with Pam.

8.   Add hash browns and tofu mixture and spread evenly.

9.   Top with cheese.

10.                Cover with foil and bake in pre-heated oven for 20 minutes.

11.                Remove from oven and allow to settle (covered) for 12 minutes.

12.                Garnish with scallions
