LUNCH TIME AT THE SOUP KITCHEN OH YEA BABE TACO SOUP

WHIDBEY’S FAVORITE TACO SOUP by CHEF DAN serves 40

INGREDIENTS:
22 cups beef broth

8 pounds hamburger, browned and grease removed

6 onions, diced

1 (28oz) diced tomatoes

1 (29oz) tomato sauce

1 (28oz) corn

12 potatoes, chopped into 1 inch cubes

1 (28oz) white hominy

4 cups dried black beans

1 cup taco seasoning

1/2 cup Chile powder

2 tablespoons dried thyme

2 tablespoons cumin

3 tablespoons dried Italian seasoning

3 tablespoons dried basil

2 tablespoons cayenne pepper

Taco chips (optional)

Sour cream (optional)

DIRECTIONS:

1. Soak black beans over night.

2. Drain and cook 2-3 hours or until soft.

3. Add all ingredients together and simmer for 1 hour.

4. Great with taco chips and little sour cream. ENJOY DAN: hallelujah
