TANYA'S CRANBERRY CHUTNEY ENJOY DAN:


                  TANYA’S CRANBERRY CHUTNEY WOW by CHEF DAN:
Serves 20

INGREDIENTS:
1-(12 Oz) bag fresh or frozen cranberries, divided
1-1/4-cup sugar+ more if needed.
1-strip orange or lemon zest
1/2-cup red wine
1-(4-inch) cinnamon stick
1/4-cup crystallized ginger
1-each sliced unpeeled orange & lemon (seeds removed)
1/4-cup golden raisins
2-tablespoons water

DIRECTIONS:
1.   In a saucepan add cranberries over medium-heat.
2.   When the start to pop, add sugar, & next 8 ingredients + water.
3.   Reduce heat to low and cook for about 18 minutes.
4.   Stirring often, cook until sugar has dissolved cranberries are soft.
5.   Then stir in reserved cranberries.
6.   Remove orange & lemon slices & chop finely.
7.   Return to saucepan.
8.   Add sugar, salt & pepper to taste
9.   Cool to room temperature before serving.
