CAULIFLOWER CASSEROLE ENJOY DAN:


                    CAULIFLOWER CASSEROLE by CHEF DAN:
Serves 6

INGREDIENTS:
1 head cauliflower, broken into florets
1 cup Mexican sour cream
1 cup shredded cheddar cheese
1/2-cup cornflakes crushed
1/2-onion chopped
1/2-bell pepper chopped
1/3-cup roasted bell peppers
1-teaspoon EACH sea salt, and garlic power
4 tablespoon bacon bits
1/4-cup Parmesan cheese
1 tablespoon smoked paprika

DIRECTIONS: (preheat oven to 325 f)
1.   Place 1-inch of water in a saucepan; add cauliflower.
2.   Bring to a boil.
3.   Cover: reduce heat to simmer, and simmer for 5-10 minutes.
4.   Drain and set aside.
5.   In a bowl combine the cauliflower and next 9 ingredients.
6.   Combine thoroughly.
7.   Transfer to a prepared baking dish.
8.   Sprinkle with Parmesan cheese and smoked paprika
9.   Bake uncovered for 30-35 minutes or until bubbly.
