TEXAS CHUCK WAGON CHILI by CHEF DAN:
Serves
6-8
INGREDIENTS:
3
pounds lean chuck steak, cut into 1/4-inch cubes
6
tablespoons chili powder
3
tablespoons ground oregano
6
cloves of garlic, minced
1
tablespoon EACH cayenne pepper and chipotle powder
1-1/2-quarts
water
1
teaspoon salt
1/3-cup
masa Harina
1/3-cup
water
DIRECTIONS:
1.
Trim
fat off edges of the roast.
2.
Render
fat for browning the meat.
3.
Brown
meat in a cast-iron Dutch oven.
4.
Add
chili powder and next 4 ingredients.
5.
Stir
to coat meat.
6.
Add
water and stir.
7.
Bring
liquid to boil and simmer, covered, for 1-1/2-hours.
8.
Make
the thick paste of Masa Harina and water.
9.
Add to chili, and stir to prevent lumping.
10.
Remove
lid and simmer for about 1 hour or more, to thicken and reduce stew to desired
constancy.
