SEAFOOD
PASTA SALAD WITH CRAB FROM WHIDBEY ISLAND by CHEF DAN:
Serves
6
DRESSING:
1
cup mayonnaise
1/2-cup
buttermilk
1
tablespoon lemon juice
1/2-teaspoon
sugar
1/4-teaspoon
EACH garlic powder, onion powder, garam masala, Turkish oregano, and berbere
1
tablespoon fresh snipped chives
SALAD:
1
(16 Oz) package pasta shells
1
pound small cooked shrimp
1
cup Whidbey Island fresh crab meat
1/2-pound
EACH fresh scallops and crayfish
1/2-teaspoon
EACH Cajun seasoning, and Old Bay seasoning
3
scallions bias-sliced into 1/2-inch lengths
1/2-bell
pepper, chopped
2
stalks of celery, chopped
1
tablespoon pickled jalapeno, chopped
1/3-cup
walnuts, chopped
DIRECTIONS:
1.
In
a bowl; whisk together all dressing ingredients.
2.
Set
aside.
3.
Prepare
the pasta according to package direction, drain set aside.
4.
Add
seafood to the top of the pasta and sprinkle lightly with Cajun seasoning and
Old Bay.
5.
Add
scallions, bell pepper, celery and jalapeno.
6.
Sprinkle
with dressing and add salt and pepper if needed.
7.
Toss
gently and top with walnuts.
