GRILLED
SALMON WITH LIME BUTTER SAUCE by CHEF DAN

INGREDIENTS:
6 (6 Oz) salmon fillets (about 1-inch thick) with skin
6 (6 Oz) salmon fillets (about 1-inch thick) with skin
1-1/2-teaspoon
finely grated lime zest
6
tablespoons lime butter sauce (recipe to follow)
2
tablespoon fresh dill
DIRECTIONS:
1.
Prepare
gas grill over medium heat.
2.
Season
salmon all over with salt and pepper.
3.
Grill
flesh side down, on lightly oiled grill rack; cover grill 4 minutes.
4.
Turn
fillets over; cover and grill 4 more minutes.
5.
Sprinkle
fillets with zest, fresh dill, top with 1 tablespoon lime butter sauce.
LIME
BUTTER SAUCE:

Garlic cloves, chopped
1/4-cup
fresh lime juice
1
teaspoon salt
1/2-teaspoon
ground black pepper
1/2-cup
melted butter
DIRECTIONS:
1.
In
a blender, add garlic, lime juice, S. &.P.
2.
While
blender is running add melted butter.
3.
Blend
until emulsified about 30 seconds.
