SEARED SEA SCALLOPS IN WINE SAUCE

Serves

INGREDIENTS:
4-6
sea scallops
1
tablespoon butter
1
tablespoon olive oil
2
garlic cloves, minced
1
shallot, minced
1
tablespoon lemon juice
Sea
salt and freshly ground black pepper to taste
1/3-cup
Pinot Grigio wine
1
teaspoon fresh tarragon
DIRECTIONS:
1.
In
a bowl combine oil and garlic.
2.
In
a skillet add butter over medium-heat when sizzling.
3.
Add
shallots and sauté for 4 minutes.
4.
Stir
in garlic, (leaving the oil behind in the bowl) sauté for 1 minute.
5.
Stir
in wine, lemon juice, tarragon and season with salt and pepper.
6.
Simmer
until reduced by half.
7.
Season
scallops with salt and pepper.
8.
Heat
the oil in the skillet over medium- heat when sizzling.
9.
Add
scallops and sear for 1 minute on each side or until golden brown.
10.
Pour
the wine sauce over the scallops.
11.
Shake the pan lightly to combine.
